"Bing Dao" means "Ice Island" in Chinese, because this tea is very cool in the mouth and is at once subtle and powerful. It's got a "creep up on you" cha qi 茶氣 and a powerful sweetness that will stay with you long after your session has ended. There is bitterness and astringency but it's never center stage and adds to the complexity of this tea.
This tea possesses the right amount of bitterness which is essential to transform the taste into lasting hui gan (a cooling sensation in the mouth). The aroma of this tea is elegant. It comes with a burst of fruity (tropical and pineapple) then with the rise of floral fragrance. It finishes with a pleasant bittersweet.
Gentle flavor and long lasting sweetness. Tea is produced from the material plucked from 150 year’s old tea tree grown at 1400m. This tea could be much more outstanding if it is kept for more than a few years when flavor gets matured and being fruity or like honey.
